Breakfast Ideas for a Low Carb Diet.
Quick to prepare recipes for low carb breakfast recipes. A high protein content in your breakfast will stop you from being hungry, and keep blood sugars in balance.
Some of these can be prepped the night before to make things even easier, and to stop you from reaching for a quick snack to stave off hunger. Some, like Cinnamon Danish, hard boiled or devilled eggs, salad with eggs of ham, On-the-Run Roll-ups, can even be packed into a container to take to work or to have on the go as preferred.

Recipes
Scrambled egg with mushrooms
Add a little chopped green veg if you have it, ie kale or similar, add a drop of Worcester sauce, black pepper at the end
Oriental Breakfast Eggs
Fry a little grated ginger, add bok choy or bean sprouts, then lightly beaten eggs. Top with soy sauce.
Scrambled egg with spinach
Scramble eggs with cream, and a little chopped spinach, and feta, goat, or mascarpone cheese at the end.
Scrambled egg with cottage cheese, chives etc
Adds a delicious chewy texture to the scrambled eggs and extra protein for a good start to the day.
Scrambled egg with sausage or bacon
Quick to make, filling breakfast packed with protein, especially if you can fry your bacon and sausage in an air fryer.
Scrambled egg with leftover chicken
Gently warm chopped, leftover chicken in frying pan. Add a little sage
Scrambled egg with chorizo
Gently fry 1/3 cup Chorizo chunks in frying pan, set aside.
Fry 1/5c finely sliced onions on medium heat in a separate pan. Next 1/3c add red, green, yellow peppers thinly sliced. Add tomato until softened. Add in the chorizo.
Add in 2 beaten eggs, stir gently but too much, you don’t want it to get mushy. Add grated cheese on top if desired.
Eastern Scrambled Eggs
Fry a little onion in frying pan, then stir in eggs. Add cumin, turmeric pepper, add chopped coriander and a squeeze of lemon at the end.
Cinnamon Danish made with cream cheese and egg base.
2oz cream cheese, 1 egg, 1/2 tsp sweetener, 1/2 tsp vanilla, dash of cinnamon.
Mix all together, and pour into 2 ramekins, bake in oven at 180 for 10 minutes or until done. Open oven door and allow to cool for a few minutes. Alternatively, cook in microwave for 1:45
In separate ramekin, melt 1 tbsp butter, 1/2 tsp sweetener, dash of cinnamon. Pour over ‘danish’ and allow to cool.
Poached egg on back bacon, tomato slice with Hollandaise sauce.
Speedy hard boiled egg breakfast
Served with 4 cherry tomatoes (or 1 medium tomato) and a dollop of mayonnaise. Can use pickled eggs if you like them.
Devilled eggs with crudités
Hard boil eggs the night before, then halve and make up filling in the morning.
Filling – egg yolks, mayonnaise, sour cream, or cream with a squeeze of lemon, add very finely chopped herbs of your choice if desired. Salt and pepper.
Serve with small celery sticks, radishes, cauliflower florets, raw asparagus tips, cucumber sticks, all very low in carbohydrates.
Salad with sliced hard boiled egg and salad dressing
Make up a salad with leaves and vegetables of your choice, add a tablespoon of dressing. Arrange sliced hard boiled eggs on top, season.
Could add sliced ham or chicken if desired.
English fried breakfast
Eggs, bacon, sausage, mushrooms, small amount of tomato, and blood pudding if desired.
Toasted Muffins
Healthy, low carb muffins to have with Scrambled Eggs, Marmite, Cream Cheese and Salmon
- 1 tbsp Butter
- 3tbsp ground almonds
- 1 large egg
- Pinch salt
- ¼ tsp baking powder
Mix all ingredients, then divide mixture between 2 ramekins, well greased, and with round of wax paper at the bottom
Bake in preheated oven at 210C for 10 minutesRemove from oven, allow to cool and slice each muffin in two horizontally.
On-the-Run Roll-ups
Wrap slices of cheese and ham around a couple of cucumber spears and a dab of mayonnaise mixed with mustard. Use sliced turkey or roast beef instead and lettuce leaves or another vegetable. Or wrap cream cheese in smoked salmon.
Corned Beef Hash.
Instead of the potatoes called for in most recipes, use white turnips or chopped cauliflower. Or replace the corned beef with leftover chicken or turkey.
Veggie Hash Browns
Sauté cauliflower florets and cut-up white turnips and onions in bacon drippings until browned and tender. Add crumbled bacon or sausage and serve with no-added-sugar ketchup.
Grilled Stuffed Mushrooms
Brush a portobello mushroom cap with oil. Broil or air fry for a minute or two on both sides. Top with browned ground beef and some grated cheese and return to the broiler for a minute or two. Top with cream cheese and chopped chives for a vegetarian option.
Eggs Fu Yung
Stir-fry a sliced scallion, a little grated ginger with ½ cup bean sprouts in a little oil until soft, then add two beaten eggs and cook, stirring, for a minute or two. Serve with soy sauce or no-added-sugar salsa.
You can also replace the sprouts with grated zucchini, spinach, or vegetable leftovers. Or replace the sprouts with ½ package well-rinsed and drained shirataki noodles.
Morning Soup
Bring 1 cup of water to a boil. Turn down the heat and add 1 bouillon cube, 4 ounces firm tofu cut into small pieces, ½ package well rinsed shirataki noodles, and 1 thinly sliced scallion. Simmer for a few minutes. Ladle into a soup bowl.
Or replace the tofu with chunks of leftover chicken, beef, or pork and/or add watercress or baby spinach leaves.
